I went looking for a link to share the hummus recipe I use, thinking I must have posted it at some point in the past, but I cannot find it. I cannot find a link to it online where I originally found it, either. So, below is the hummus recipe I use (my notes in parentheses), originally posted by Patricia Resnick to eHow.com, printed for my recipe folder (and used ever since) in October 2010!
Hummus
2 cans garbanzo beans/chickpeas (or 4 cups if cooked from dry*)
2-4 cloves of garlic, peeled (or more! You can substitute chopped, jarred garlic or frozen garlic cubes, but not garlic powder)
1/4 cup sesame seeds
1/4 cup lemon juice
1/3 cup olive oil
salt (and pepper) to taste
Blend all the ingredients in a food processor until smooth (adjusting any of the ingredients to taste and consistency of preference.) Enjoy!
*Currently, I cook dry beans, including garbanzo, in our InstantPot, however, when I first used this recipe, I used a pressure cooker. Stove top cooking works too, but it takes a long time.
